This Fresh Mint Dressing is so delicious and easy to make!

It is similar to a light vinaigrette with a creamy texture. I find that homemade salad dressings are so much tastier than store-bought dressings. It obviously pairs well with all salads, but could also be used as a sauce on some of your other favorite dishes. I love it paired with my simple and tasty Red Leaf Lettuce and Strawberry Salad.

This dressing is versatile, you could try it on fish, sandwiches, fruit, or pasta salads! 

 This recipe yields about 1 cup of dressing and can be stored in the fridge for one week. 

Fresh Mint Dressing
Salad Dressing

Ingredients

  • 10 mint leaves
  • 5 spearmint leaves (optional) 
  • 2 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tbsp honey 
  • 3 tbsp red wine vinegar 
  • 1 tbsp Dijon mustard 
  • 1/4 tsp salt
  • 1 garlic clove finely chopped
  • 15 turns of black pepper 

Instructions

Combine all ingredients in your food processor and blend until smooth. Taste and add more salt/pepper if needed. Store in a mason jar or salad dressing container and store in the fridge for one week.
