

When I first saw these cheesy garlic parmesan potatoes on the dining room table on Christmas day my heart sank a little bit. Why you might ask? Well, because mashed potatoes are probably one of the best foods EVER made and a MUST on the table especially for Christmas dinner, but let me tell you this…my aunt’s cheesy garlic parmesan potatoes will change your life. The bold lemon and garlic flavor mixed with the gooey cheese works so well. After my first bite, I was hooked…and those that know me, know I love mashed potatoes. These taters will have you asking yourself mashed potatoes who?

Ingredients
- 5-pound bag of golden potatoes
- 1 head of garlic
- 1 medium size onion sliced
- 1 ½ stick of unsalted butter
- 3 lemons
- 1 (5oz) container of Bel Gioso Romano cheese
- 1 (5oz) container of Bel Gioso Asiago cheese
- 1 (5oz) container of Bel Gioso parmesan cheese
- 1 block of Fontina cheese
- Seasoning salt
Instructions
- Preheat your oven to 400 degrees
- Oil your glass baking dish
- Wash and dice potatoes into large cubes and place into your dish
- Slice the onion and add it to the dish
- Mince the garlic
- In a microwave bowl, combine butter, lemon juice, and garlic
- Microwave until melted – usually 12 – 15 seconds then (stir)
- Add 2.5oz (½ the container) of all the different cheeses
- Grate the Fontina cheese or cut into small pieces and add to the dish
- Pour the butter/garlic/lemon mixture over the potatoes.
- Sprinkle with season salt and mix well (a little goes a long way)
- Bake until the potatoes are tender usually 40-45 minutes
- When done sprinkle the remaining 2.5oz (½ the container) of all the different cheeses and cover with aluminum foil until melted about 5 minutes
