I am an egg-finatic. Scrambled, Over easy, Over medium, poached, hard boiled you name it. I love it all.
This recipe is easy, quick and delicious. Who doesn’t love a runny egg and guacamole in the morning? I can usually whip this up in under 10 minutes.
- Two pieces of toast (your choice)
- ½ cup of guacamole
- ½ cup of arugula
- Two eggs over easy/over medium
- A lemon wedge
- 1 tablespoon white truffle oil
- 1 tablespoon olive oil
- Salt & pepper to taste

In a small saucepan heat 1 tablespoon of olive oil over medium heat. Add your two eggs. Add a few drops of water and cover with a tight lid. While the eggs are cooking toast your bread and have your guacamole, arugula, lemon, and truffle oil ready. Once the eggs are cooked to your liking you’ll want to get it on top of the arugula quickly. Add a sprinkle of salt & pepper and voila!
