These Banana Blueberry Fritters are just as delectable as they are beautiful. Micah and I love these delicious treats. It’s a meal I can make in under 15 minutes and usually lasts us the entire weekend unless Micah and I get carried away and finish them in a day. He likes his with fresh cut strawberries and I like mine with a spread of peanut butter. It’s a filling and delicious treat where I feel like I’m having sweets, but I’m really not. Most days, I pop a couple in the microwave and 20 seconds later it’s an instant meal. Sometimes it’s breakfast, sometimes its dessert. Either way, it’s delish.

I’ve made these Fritters a few different ways…it all depends on what I have on hand. Sometimes it’s 2 bananas…sometimes I switch the vanilla extract and use a pinch of cinnamon or nutmeg.  The more I make these I tend to adjust the recipe to my liking. This particular recipe has been my favorite so far. 

This recipe will make 6 Banana & Blueberry Fritters.


  • 3 bananas 
  • 1/4 cup fresh blueberries
  • 1/4 cup almond flour or (flour of choice)
  • 1/4 cup plain flour
  • 1 Tsp coconut oil
  • 1/4 Tsp vanilla extract (optional)


  1. Add your bananas to a mixing bowl and mash until smooth. Once your mixture is smooth add your vanilla extract and stir until combined.
  2. Gradually add in the flour. Add it a little at a time until you have a thick scoopable consistency. 
  3. Gently stir in your blueberries. 
  4. Now it’s time for some heat! Add your coconut oil to a nonstick frying pan and cook over medium-high heat. 
  5. Use a scoop of batter that is slightly smaller than the size of your palm.
  6. Cook each side for about 3-5 minutes. Once you start to see the edges turn a golden brown flip and cook the other side for an additional 3-5 minutes. These can cook quickly so adjust your heat to make sure you don’t burn them!

Recipe Notes

  • If you put the batter in the pan and it spreads immediately and starts to bubble along the sides you did not add enough flour. Add the mixture back to the bowl and add more plain flour 1 tablespoon at a time. Once the mixture thickens up, add it back to the pan.
  • I usually make my Fritters 3 at a time. If you’d like you can add the cooked Fritters to your oven and keep them on warm while the other 3 are cooking in the pan. This is totally optional, so feel free to skip this step.
  • The more you make these you will find a perfect balance of ingredients. You may prefer a ½ cup of flour versus a ¼ cup of flour or you may like this recipe better with 2 bananas instead of 3. This recipe is flexible, so have fun with it! 
  • Lastly, I prefer to use coconut oil in the jar instead of spray coconut oil. I think it has a much richer flavor. When adding the coconut oil to your pan, remember that a little goes a long way. If you decide to add additional coconut oil, do it a little bit at a time.
