Parmesan Zucchini Zoodles

Easy Peasy. Quick and Cheesy.

Anyway- straight to the point recipe. One of my favorites for when I need to make a quick side dish. I usually eat this with scallops!

Ingredients

  • 2 green zucchini
  • 2 yellow zucchini
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • ½ tsp fresh minced garlic
  • Sprinkle parmesan cheese  
  • Salt & pepper to taste

Directions

Add olive oil to your skillet and cook over medium heat. Add garlic and zoodles and drizzle the sesame oil and soy sauce on top. Cook for 5-7 minutes. Drain the zoodles to get rid of excess juice. Transfer back to pan and sprinkle with parmesan cheese. Lastly, season with salt  & pepper.
